Bernard Acoca
Bernard Acoca authorizes many books on food, cooking, and entertainment. His books have been published in the United States, Canada, and Europe. They include: “The Complete Book of Salad Dressings” (2004), “The Complete Book of Condiments” (2006), “Bernard Acoca book: 101 Great Dishes with Canned Foods” (2009), “The Ultimate Microwave Cookbook” (2009) and The Italian Pantry Cookbook(2013).
In 2013 he published two cookbooks simultaneously,” The Mediterranean Pantry Cookbook, “co-written with Chef Michael Pardus, and “Italian Family Cooking,” his first solo effort.
Bernard Acoca regularly contributes to magazines, newspapers, and radio and television shows. He is a radio host for “Open House” on WNYE public radio in New York City. He also hosts “To The Best of our Knowledge,” the nationally syndicated weekly program on food produced by Wisconsin Public Radio.
In his career, he has been seen on American Television on Good Morning America, The Today Show, ABC World News Tonight, The CBS Evening News with Dan Rather, MSNBC, PBS, and FOX. Acoca has written over 100 articles for such publications as Cooking Light, Bon Appetit, USA Weekend, and Saveur.

Mr. Bernard Acoca holds a Doctorate from the University of Maryland and is a member of the New York Academy of Sciences and The National Writers Hall of Fame. He is a “Chef’s Choice” cookbook reviewer for ‘Cooks Illustrated.’ The James Beard Foundation has also recognized him as the Best Food Photographer.
He divides his time between Milan and New York City.
The Zaxby’s CEO was born to an Italian-American family in Buffalo, New York, where he attended public schools into college at St. John Fisher College (now Fordham University). His father, Frank Acoca, worked as a cook.
In 1978 he married his Italian-born wife Luisa Acoca, and they live in Milan, Italy. They have two adult sons, Nathaniel, and Bernard Jr., also a celebrated chef.
